Our 9-step process

Choosing the Right Farms (Single Origin, Direct Trade)

We work closely with farmers who care about quality and sustainability. Building these relationships helps us ensure the beans come from trusted and responsible sources.

Picking at the Right Time

Our partner farmers carefully hand-pick cherries at the perfect moment—not too early, not too late—to capture the best flavors. There’s no automation or machine picking here—just skilled hands ensuring every cherry counts.

Sorting the Cherries

Each batch of cherries is sorted (through several stages) keep only those that meet our quality standards. It’s a careful process to make sure nothing is wasted, but only the best move forward.

Removing the Pulp

The next step is separating the beans from the cherries. This step, known as pulping, keeps the beans intact and ready for the next stage.

Fermenting the Beans

Fermentation helps the beans develop their flavor naturally. By giving the beans the right conditions, we let them take on their unique characteristics.

Drying the Beans

Once fermented, the beans are sun-dried until they reach just the right moisture level. This is an important step to ensure they’re stable and ready for roasting.

Cleaning and Polishing

After drying, the beans are screened and cleaned to remove impurities or foreign matter. We also polish them to remove the silver skin, leaving them smooth and ready.

Roasting the Beans

Roasting is where the beans’ unique flavors are developed. With years of experience and a deep understanding of Vietnamese coffee, our team approaches this step with care and attention, ensuring each batch is roasted to bring out its best.

Final Quality Checks
